Winemaking: The grapes were harvested by hand just as each individual vineyard achieved its perfect balance of flavor, ripeness, and acidity. Every lot of grapes was 100% destemmed, then gently pressed into stainless steel tanks, and inoculated with yeast. A small portion of this wine- five percent of the total blend- was transferred to neutral French oak barrels for additional richness and complexity.
